Heat is a personal preference: chili and pepper contain no FODMAPs, so it never changes the numbers. Some guts still find capsaicin irritating, which is why it's your call.

Gut lenses

Both sit on top of the FODMAP rule and never loosen it. Fibre-forward reaches for fibre-carrying safe ingredients (oats, kiwi, carrots, lentils) for slow-transit, methane-type cases. Lower sulfur leaves out eggs, red meat, dairy, cruciferous vegetables and alliums, the foods a low-sulfur approach to hydrogen-sulfide SIBO restricts; that approach is still early-evidence. Method

  1. Prepare 1080 g jasmine rice (~6 cups cooked) and divide it between the bowls as the base.
  2. Make the dressing: whisk 90 g fresh lemon juice (~6 tbsp) with 60 g tomato paste (~3¾ tbsp) and 1 tablespoon of water until smooth.
  3. Prepare 216 g red bell pepper (~2 medium peppers) and 450 g baby spinach (~15 cups raw): slice raw vegetables thinly, or blanch or roast firmer ones until just tender.
  4. Season 900 g lean beef (~31½ ozs) with salt and pepper and sear in a hot pan for 3 to 4 minutes per side until cooked through. Rest, then slice.
  5. Layer the warm protein and the vegetables over the grain, keeping each component in its own section.
  6. Chili heat (your preference, not a FODMAP factor): add a small pinch of chili flakes or a few slices of fresh chili with the aromatics.
  7. Drizzle the dressing over the top and serve while the protein is still warm.
