Heat is a personal preference: chili and pepper contain no FODMAPs, so it never changes the numbers. Some guts still find capsaicin irritating, which is why it's your call.

Gut lenses

Both sit on top of the FODMAP rule and never loosen it. Fibre-forward reaches for fibre-carrying safe ingredients (oats, kiwi, carrots, lentils) for slow-transit, methane-type cases. Lower sulfur leaves out eggs, red meat, dairy, cruciferous vegetables and alliums, the foods a low-sulfur approach to hydrogen-sulfide SIBO restricts; that approach is still early-evidence. Method

  1. Preheat the oven to 350°F. Coat a muffin tin with nonstick cooking spray.
  2. Whisk together eggs, lemon zest, lemon juice, and dill. I like to do this in a quart-size glass measuring cup for easy pouring.
  3. Distribute the spinach and then the salmon evenly into the prepared muffin tin cups. Add the egg mixture, dividing evenly between the cups (about halfway full).
  4. Bake for 18-22 minutes or until the eggs are set. Remove from the oven and cool slightly before serving.
  5. Serve warm.
